Can I give the annual exclusion amount to several people?

Right now, I make gifts to several relatives during the year and want to understand how the annual federal exclusion works. Right now, the gifts are not all on the same date and may include both cash and property. The dates and amounts shown across my statements, appraisals, or tax forms are not consistent, so I need to know which record actually controls the calculation.
